The CAPS silicon molds were born from the idea of a self-sufficient visual dessert, without any artifice or colouring. It is made up of 2 parts, the top part is designed to bring colour by using a fruit jelly or a dried fruit cream usually inside entremets. The bottom part is designed to receive the different layers of biscuit, mousse, crisp… No finishing necessary except for a neutral topping to sublimate the shape and colours…
