CAPS silicon molds were born from the idea of a self-sufficiently visualized entremets, with no gimmicks and no colorants. It is made up of 2 parts: the top part is designed to add color by using a fruit jelly or dried fruit cream usually found inside entremets. The bottom part is designed to receive the different layers of cookie, mousse, crisp… No finishing required other than a veil of neutral topping to sublimate the shape and colors…
